Early start today as I had to take eldest to meet his cub trip coach – at 6.45am! I stayed in my pjs cos I thought I would go straight back to bed! However Elliott’s snoring put paid to that.

Needless to say by about 9.00am I was starving! So I decided to make something I had seen on The Martha Stewart website a while ago and saved up for a weekend treat.

So ham and egg crepes it is! Now – whilst I can make crepe/pancake mixture with the best of them – I am totally useless at actually making pancakes. My kids will testify to this as this Pancake Day in daddy’s absence I failed miserably and the kids have asked me to never make them again! (result!)

So…..I got Elliott to do the actual crepe making bit from the mixture I made.

To make 4 crepes I simply blended together 2.5oz plain flour, 150m lmilk, 2 eggs, 1/4 teaspoon salt, half tablespoon of sugar.

Then in a well oiled pan Elliott added the mixture – you don’t want these pancakes to be crispy as you will be baking them so they will crisp up in the oven. He left them cooking over a low heat, flipping them over once golden brown on the underside (6/7 minutes each side he tells me!)

I then put some greaseproof paper on a baking tray, added the crepe, a piece of ham and then cracked the egg over the ham. To top the egg seeping out you have to quickly fold up the corners of the crepe into a square – I was dubious that they would stay there but the egg white kind of glues them in place. Add salt and pepper and bake in the oven at 180 celsiusĀ  for 10-12 minutes depending on how you like your eggs.

Elliott (the ‘chef’) declared these yummy – though we think we were being a bit greedy having two each! Can see this will be a staple weekend item!
